The way my eyes looked for years to pick up the ball. "The wind is a round object in the shape of a sphere, not a rectangle like a plane. Keep your focus on the wind in front of you so you can use its shape to get to the ball.". From my initial experience, the over my head wind is so strong you can`t fly a kite over the head wind. You need to turn. For example: if you start your windsurf with no wind in your front (behind you and over your head) you will never be able to use the wind to turn or help you turn to face the wind, you will always turn your head back to the shore.
How does someone new to sailing use a trailer to practice sailing their sailboat? How can I buy a new sailboat?
Is there a way I can follow along with online tutorials or a good series of books that could teach me how to sail a sailboat?

The other answers are great, but I thought I would chime in with a few more options that I've found useful over the years.
A sailing harness and tower,
A good place to start is a sailing harness.  I started with a harness, and recently upgraded to a sailing tower. 
The basics of sailing are almost entirely learned in the harness.  As you get more into the sport, you will be using the tower and other equipment to carry you and your sails over the water.  With a tower you can have better control of the position of your sail.  Also, you can carry more sail and use much larger sheets.  A tower is also useful for carrying camping equipment and cargo on a long trip.
A sailing tower
A sailing tower is the best type of sailing tower.  It will provide you with the most control of the rig, the best steering, and the best balance.  It is much heavier than a model. 
A basic tower is available in many places, but the cheapest model that you can buy isn't all that useful if you want to be able to control your sails well.  You'll need a really solid, level, and smooth base to get an effective tower.
You'll also need some kind of sail-control device.  You can use the provided (or make your own) handle on the front of the tower, or you can use a device that would be used on a double-handed sailboat.
