I like this. I can make a game in a few hours in this (Though I just learned how to do it a couple days ago, and haven't finished my game yet, but it's not bad!). It seems a little bit like Minecraft, where there are millions of people out there making their own worlds.

Syntax for setting a select options value when using ng-options
I'm using ng-options to iterate over a collection of User objects from a Mongo DB. I am generating a select input box for role by setting the ng-options attribute like so:
However, when the user selects an option that is not in the collection, the selectedUser.role property is null. I have a feeling that I need to add a default value to the ng-options attribute, but I don't understand what the appropriate syntax is.
Has anyone else encountered this situation?

As the answer says, you don't need a default value for the selected attribute. 
It's enough to set the default option equal to the value of the user object that you are iterating.
Additionally, you should simplify your model by using an array, as track by will add a default item to it, even if it's a single object:
$scope.users = [{role: 'user'}];
