Part 2: In this section, you will create a business letter introducing your company to your client including the description of the plans of the event that you are creating for them. This would include the theme, a brief description of their menu and décor. You will also want to give them the details of time that their event will be held and where. You will also complete a Banquet Event Order (BEO). This is a complete outline of the event (Who, What, When, Where, How’s). This is a contract and must be completed and signed. A BEO is important because it keeps you and your team on task as well as informs the client how you will complete their event. In this section, you also need to have a copy of your entire menu, you will choose from pre-arranged menus (menus 1-6). You will include a brief description of each menu item. Finally, you need to complete a thank you letter. In this letter you will ensure that your client knows how much you appreciate their business and welcome them to choose your company to provide catering needs in the future.
