How to plan for progression.
Through observations of each Childs learning  in this experience ,    I would collate  the evidence  this may be through pictures and writing down observations  on paper to implement into their Learning Journey Folder.To ensure  progression and continuity this experience can be  repeated to identify if they can count using the number names to a fruit item independently. This experience can be extended to introduce different materials to count out also as an experience at snack time with the fruits from the story.
